TRAVELLING CHEFS SERIES
LANNA JOURNEY: BREAKING BOUNDARIES
Siri Sala invites you to an extraordinary culinary experience where rules are reimagined, traditions are transformed,
and every course tells a story of Northern culture you might've never heard — until now.
For Episode 7 of the Travelling Chef Series, we proudly present Chef "Kong” Chaiwongkhajorn,
the trailblazing force behind Locus Native Food Lab in Chiang Rai as both Chef and Sommelier for the night.
Known for pushing the limits of Thai gastronomy, Chef Kong breaks away from convention
to spotlight indigenous ingredients, foraged finds, and forgotten flavours from Northern Thailand.
But it doesn’t stop at the plate.
As a certified sommelier, he also curates each wine pairing to elevate his dishes — creating a rare,
boundary-blurring experience where food and wine speak the same bold language.
Expect a 7 course dinner that fuses research, ritual, and raw creativity,
paired with unexpected bottles and regional infusions that reflect Thailand’s own terroir.
This is not a dinner. This is a journey — and you’re invited.
Episode 7 | Lanna Journey: Breaking Boundaries

About Lanna Culture
Many traditions Thais now consider “Thai” began in the old Lanna Kingdom of the north, a culture with its own language, customs, and identity distinct from central Thailand. These include the Yi Peng lantern festival, sticky rice as a staple, and dishes like khao soi, sai ua (herbal sausage), and nam phrik noom chili dip.
The graceful fon dances, multi-tiered wooden temples, and intricate woodcarving are also Lanna legacies, along with cultural norms like gentle, indirect speech, strong community bonds, and merit-making that blends Buddhism with spirit worship.
At Siri Sala, Chef Kong shares the traditions, flavors, and customs he fell in love with during years in the north, giving Bangkok guests a vivid taste of this proud and distinct heritage.
